Potato Soup

Soup for the soul, this goes well with slices of thick crusty bread or fresh croutons.  

  • 1/4 c. butter
  • 1 large onion, sliced
  • 4-5 medium potatoes, sliced
  • 1 stalk celery with leaves
  • 4-6 cups of water or vegetable stock
  • salt and pepper to taste

IN a large soup pot, heat butter on a low heart. Add onions and cook for 5 mins or until soft.

ADD potatoes, water and celery. Bring to a boil then lower to a simmer and cook for 20 to 20 mins.

SEASON with salt and pepper to taste.

PUREE in a blender in small batches.
